Italian Pasta Salad
Ingredients:

250 g pasta, cooked and drained
150 g cherry tomatoes, cut into quarters
50 g pine nuts, roasted
200 g mozzarella cheese, cut into small cubes
150 g rocket, washed and drained
salt
pepper
3 teaspoons pesto sauce
3 tablespoons balsamic vinegar
90 ml olive oil
1 garlic clove, minced
1 teaspoon honey
1 teaspoon mustard

Instruction:

Mix together the pasta, tomatoes, pine nuts, mozzarella and rocket. Season with salt and pepper. For the salad dressing, mix together the pesto, vinegar, oil, garlic, honey and mustard until well combined. Pour the dressing over the salad and toss gently.
