Vegetable Bake

2 zucchini, shredded
1 large potato, grated
1 green pepper, finely chopped
2 stalks celery, finely chopped
1 leek, thinly sliced
2 slices whole wheat bread, crumbed
12 cup shredded sharp cheddar cheese
3 eggs, lightly beaten
1 tablespoon chopped fresh dill weed
freshly ground black pepper


Place zucchini, potato, green pepper, celery, leek, bread crumbs, cheese, eggs and dill weed in a large bowl and mix to combine. Season to taste with black pepper. Spoon mixture into a lightly greased baking dish and bake at 400 degrees F, 200 degrees C for 45- 50 minutes or until firm.
