Everything Soup

1 tablespoon olive oil
1 12 yellow onions
3 garlic cloves
4 slices bacon
3 cups celery
1 red bell pepper
1 orange bell pepper
1 yellow bell pepper
4 carrots
1 cup peas
1 cup 1% low-fat milk
2 12 lbs halibut
1 lb salmon
1 quart chicken broth


Heat olive oil in a large heavy stock pot. Chop onions and garlic, and brown them in the oil. Chop and add bacon. Chop and add peppers, celery, carrots. Add milk and chicken broth. Bring to simmer. Add peas, halibut and salmon. Simmer for 20 mins or until the fish is cooked. Serve, with or without cheddar.
