Mango-Chile Potato Salad

3 lb red potatoes; quartered
1/2 cup dried mango; medium dice
1 tbsp onion powder
1 tbsp garlic powder
1 tbsp paprika
1/2 cup mayonnaise
8 oz Kraft Chipotle Mango dressing
1/3 cup rice vinegar
1 orange bell pepper; small dice
1 red bell pepper; small dice
3 shallots; minced
1 cilantro; chiffonade
1 bunch scallions; cut on bias
1 salt and pepper


Cover potatoes with cold water. Add salt. Boil until fork tender. Drain. Cool down in fridge. Combine mayo, salad dressing, and vinegar. Add dried spices, salt, and pepper.
