Smooth Sweet Potato Bites

2 Sweet potatos
60 grams Butter
100 grams Sugar
20 grams Honey
80 ml Heavy cream
1 Egg yolk
1 Vanilla extract
1 Egg yolk (for the glaze)
1 tsp Water


Peel the sweet potatoes and boil. When they become soft, transfer into a bowl, and mash well. Lightly microwave the butter to melt, and add to the bowl. Add the egg yolk, sugar, and honey, then mix with a spatula. Add the heavy cream little by little. Adjust the consistency so that you can roll the mixture by hands. Add a few drops of vanilla extract. Strain the mixture with a sieve. Don't skip this step even though it's a lot of work. Arrange into shapes, and place on a baking sheet. Brush on a glaze made of beaten egg yolk and water. Preheat the oven to 180C, and bake for about 30 minutes while checking occasionally, then it's done.
