Junior League - Mexican Rice
Ingredients:

1 12 cups rice
2 tablespoons vegetable oil
3 tomatoes, chopped
1 onion, chopped
1 jalapeno chile, chopped
2 teaspoons cumin seeds
12 teaspoon garlic powder
12 teaspoon pepper
fresh cilantro
minced bell pepper
carrot
3 cups boiling water

Instruction:

Saute the rice in oil until golden brown. Stir in tomatoes, onion, jalapeno, cumin, garlic, pepper, cilantro, bell pepper, carrots. Add water, reduce and simmer. Cook covered for 15 minutes or until liquid is adsorbed and the rice is tender. Remove from heat. Let stand before serving.
