Green Rice (Broccoli, Cheese, and Rice Casserole)
Ingredients:

2 tablespoons butter
1 onion, chopped
1 12-2 cups cooked brown rice
2 cups chopped broccoli
23 cup grated cheese
12 cup low-fat milk

Instruction:

Saute onion in melted butter. Meanwhile, steam broccoli until tender; drain. Combine all ingredients and bake in covered casserole at 350 degrees for 45 minutes.
