Foolproof Crumble

225 grams whole meal or plain flour
115 grams butter
115 grams soft brown sugar
1 tsp ground ginger
1 large cooking apples ( or enough fruit to cover bottom of dish)
80 grams caster sugar
1/2 lemon: juice and zest
1 pinch ground cinnamon


Make crumble rubbing butter and flour together until they resemble breadcrumbs. Stir in brown sugar and ginger. Cut apple ( or rhubarb) and place in three or four ramekins or an oven proof dish. Make sure bottom of dish covered by the fruit. Sprinkle fruit with juice and zest of half a lemon (or orange if preferred) and golden caster sugar and a touch of ground cinnamon if liked Spread previously prepared crumble on top. Bake for 25 or 30 minutes at 190C until golden brown. Serve with yogurt, custard, cream....
