Buttered Carrots with Granola

1 lb baby carrots
3/4 stick butter
1/2 cup brown sugar
1/2 cup honey
1 cup granola


Cover carrots with cold water. Boil until carrots brighten in color, approximately ten minutes. Drain. Melt butter slowly in a saute pan. Add carrots and half the granola. Toss. Add brown sugar and honey. Toss. Garnish with crunchy granola for contrast in texture. Variations; Almonds, walnuts, hazelnut, pecan, maple, citrus zest, dried fruits
