Green Banana Salad Recipe

15-20 green bananas
2 Italian peppers
1 med. sized onion
1/3 c. stuffed green olives
1/4 c. red vinegar
1/4 c. extra virgin olive oil
1/4 teaspoon black pepper
Dash of salt


Peel the green bananas and bring them to a boil in salted water till tender and you can pierce with a fork, yet not fall apart. (Note: green banana peel will stain your hands - rub hands with salt when you're through peeling step). While the bananas are boiling, slice the onion and peppers into thin slices. Chop the stuffed green olives. Place minced ingredients into a large bowl. Take green bananas and slice into rings of 1/4 inch thickness. Drop into bowl. Add in vinegar, extra virgin olive oil and black pepper. Blend well. Serves 4.
