Greek Beef Stew

2 lbs stew meat
2 -3 tablespoons oil
1 large onion, chopped
2 cloves garlic, minced
1 (6 ounce) can tomato paste
12 cup red wine
1 12 cups water
1 cup sliced carrot
1 lb rotini pasta
1 lb Velveeta cheese, cubed
2 tablespoons butter


Saute meat in oil with the onions and garlic. Add the tomato paste, wine and water. Simmer at least one hour. Add the carrots and simmer until carrots are tender. About 1/2 hour. Meanwhile, cook rotini acording to package directions. Drain. Fold in cheese cubes and butter and stir until cheese is melted. Serve the stew over a mound of pasta.
