Cantabria Rustic Custard Squares

50 vanilla wafers, crushed, divided
3 Tbsp. butter
3/4 cup sugar
3 eggs
1 container (16 oz.) BREAKSTONE'S or KNUDSEN Cottage Cheese
1 cup milk
1 tsp. grated lemon zest Safeway 4 ct For $5.00 thru 02/09
1-1/2 cups thawed COOL WHIP Whipped Topping


Preheat oven to 375F. Grease 8-inch square baking pan; set aside. Reserve 3 Tbsp. of the crushed wafers; set aside. Beat butter and sugar in large bowl with electric mixer on medium speed until well blended. Add eggs, 1 at a time, mixing well after each addition. Blend in cottage cheese, milk, lemon zest and remaining crushed wafers. Pour batter into prepared pan; sprinkle top with reserved 3 Tbsp. crushed wafers. Bake 45 min. or until set. Cool 20 min. ; serve warm with a dollop of whipped topping or cool completely. Sprinkle with additional grated lemon peel, if desired.
