Pumpkin Spice Latte Granola

1/2 cups Coconut Oil
1/2 cups Honey
13 cups Canned Pumpkin
1 teaspoon Pumpkin Pie Spice
1/2 teaspoons Cinnamon
1 Tablespoon Instant Espresso Powder
3 cups Gluten Free Old Fashioned Oats
13 cups Roughly Chopped Pecans


Preheat oven to 350 F. Combine coconut oil and honey in a medium size mixing bowl. Microwave for 45 seconds or until coconut oil is melted. Add pumpkin, spices and espresso powder and stir mixture until well incorporated. Add oats and pecans and stir mixture until all the oats are completely covered. Grab a large rimmed baking sheet, line it with foil and spray with cooking spray. Spread oats mixture thinly and evenly across the baking sheet. Bake for 10 minutes, stir mixture then bake for 10 more minutes. Remove oats from oven and let them cool. Store in an airtight container.
