Basil Grilled Chicken

34 teaspoon coarse fresh ground black pepper
4 bone-in skinless chicken breast halves, fat discarded,washed,and patted dry
14 cup melted butter or 14 cup margarine
14 cup chopped fresh basil
12 cup slightly softened butter or 12 cup margarine
14 cup minced fresh basil
1 tablespoon grated parmesan cheese
12 teaspoon garlic granules
14 teaspoon salt
14 teaspoon fresh ground black pepper
fresh basil sprig (to garnish) (optional)


Press 3/4 Tsp pepper into meaty sides of chicken breasts. Combine melted butter with 1/4 cup chopped basil. Brush chicken lightly with the melted butter mixture. Prepare charcoal grill for medium heat. Combine softened butter with minced basil, Parmesan cheese, garlic, salt, and 1/4 Tsp pepper in a small bowl. Whip until blended and smooth, transfer to a small serving bowl, and refrigerate until needed. Grill chicken over medium coals for 8-10 minutes on each side or until done, basting frequently with melted butter mixture and turning occasionally. Serve grilled chicken with basil-butter. Garnish with fresh basil leaves if desired.
