Oat-Coconut Cookies
Ingredients:

12 cup shortening
12 cup sugar
1 egg
1 cup quick oats
1 cup flour
1 (3 1/2 ounce) package instant coconut cream pudding mix
12 teaspoon baking soda
12 teaspoon cream of tartar
14 teaspoon salt

Instruction:

Cream shortning and sugar. Add egg; mix well. Combine dry ingredients. Add to creamed mixture; mix well. Roll into 1 inch balls. Place on kightly greased baking sheet. Flatten with a fork. Bake at 350* for 11 minutes, until edges begin to brown. Cool on wire racks.
