Ladybirds Mini Baked Cheese Cakes

1 cup sweet biscuit crumbs
40 grams melted - butter
125 grams cheese cheese - at room temp
1/2 cup sugar
2 small eggs
1 pinch salt
1/4 cup plain flour - sifted
1 tsp lemon rind - grated
1 tbsp lemon juice
1/2 cup sour cream


Preparing the bases :Lightly grease the holes of a muffin tray . Now Place the biscuit crumbs and the melted butter together in a bowl and mix well to combine all . Next press the biscuit mixture evenly into all the bottom of the greased muffin tins to form the cheese cake base . place in refrigerator to set while making the filling . Making the filling : with electric mixers beat the cream cheese until smooth and creamy , then add the sugar and beat well to combine , next add the eggs , 1 at a time , beating well after each egg addition , now add the pinch of salt , lemon rind , lemon juice , sifted flour and the sour cream and beat well to combine all until smooth and creamy . Assemble and Baking the cheese cake : Take the set tray of cheese cake bases out of the fridge and gently pour the cheese filling mixture evenly into all the individual cheese cake crusts . Now place tray of prepared cheese Cakes into a moderate to low oven , about 150C , for 30 - 35 minutes until cooked through and set and slightly golden . Done : Once cooked , remove the cheese cakes from the heat and let cool , once cooled removing from trays , and place in refrigerator to cool completely . serve cold with toppings of your choice . enjoy . :-) .
