Lemon Ricotta Pancakes

1 cup ricotta cheese
2 tablespoons sugar
1 cup flour
1 teaspoon baking powder
12 teaspoon nutmeg
12 teaspoon cinnamon
2 eggs
23 cup milk
1 tablespoon lemon juice


Combine all ingredients in a bowl until blended. Melt butter or margarine in a frying pan or griddle over medium-high heat. Pour batter onto pan and cook until batter begins to bubble or pancakes are brown around edges. Flip and cook on other side.
