Simple Potato Bread

3 tbsp Instant mashed potato flakes
100 ml Boiled water
170 grams Bread (strong) flour (you can also mix in a bit of whole-wheat flour)
2 tsp Baking powder
1/2 tsp Salt
3 tbsp Parmesan cheese (optional)
50 ml Water
1 dash Rolled oats (for topping)


Preheat the oven to 200C. Mix the instant mashed potatoes and boiled water well. (You can substitute with mashed potatoes 100 g + 1 tablespoon of milk.) Add the remaining ingredients except for the topping in the order from the list to Step 2. Knead until the mixture becomes a soft earlobe-like consistency. Divide the dough into 8 portions, and roll into balls. Dab on a bit of water and sprinkle the surfaces with oatmeal to your liking. Reduce the oven temperature to 180C, and bake for about 15 minutes until they become crispy and golden brown. They're great when fresh out of the oven, so warm them up in a toaster oven when cooled. They'll become crispy and tasty again! Variation 1: [Butter flavour] Add 1 tablespoon of butter instead of cheese. Variation 2: Add 1 egg to make them even fluffier. Reduce the amount of water by 1 tablespoon. Variation 3: [Kabocha squash] This is a variation by Cookpad user "Yosshi". She added kabocha squash flakes, butter, and poppy seeds.
