8 slices bacon
500 g cottage cheese
Preheat the oven to 200C Add oil to a large saucepan and cook the bacon and mushrooms for 2-3 minutes. Remove the saucepan from the heat and stir in the ham. In a mixing bowl, beat the eggs and cottage cheese together and season to taste. Add the bacon mixture and mix to combine well. Pour into an ovenproof dish and bake in the oven for approximately 30 minutes until the quiche is set and golden brown. Leave to cool for approximately 2 hours. Garnish with the sliced tomato before serving.
