Pork Salad Waldorf Recipe

1/2 c. mayonnaise
2 c. celery, julienne cut, blanched
2 lg. apples
1/2 c. walnuts
1/2 teaspoon Worcestershire sauce
24 ounce. pork, cooked, diced
1/2 teaspoon Dijon mustard
1 parsley sprig
1/2 lemon
1 head Boston Bibb lettuce
3 cranberries, fresh


Peel and core the apples and dice into 1/2-inch cubes and place in mixing bowl. Add in celery and lemon juice and mix well. Add in the pork, Dijon mustard, salt and pepper to taste, walnuts, Worcestershire sauce, and mix well. Add in the mayonnaise and gently fold everything together. Transfer to a serving bowl and garnish with parsley sprig, cranberries, and sprinkle with walnuts. Serve on a bed of Bibb lettuce. (Prep and Cooking Time: 30 min)
