Apple Pumpkin Oatmeal Raisin Cookies

1 whole Egg
1/2 cups Pumpkin - Canned (Not Pie Filling)
1 teaspoon Vanilla Extract
13 cups Brown Sugar
1 cup Whole Wheat Pastry Flour
1 teaspoon Baking Soda
1/2 teaspoons Salt
1 cup Oats, Uncooked
1 teaspoon Ground Cinnamon
1/4 teaspoons Nutmeg
1 cup Apples, Peeled, Cored And Shredded
1/2 cups Raisins
1/4 cups Powdered Sugar
1 drop Maple Extract, Or More As Needed To Reach Desired Consistency And Sweetness
1 teaspoon Milk Or More As Needed To Reach Desired Consistency


Preheat oven to 350 F. Line two baking sheets with parchment paper; set them aside. In a large bowl add egg, pumpkin, vanilla and brown sugar and mix until combined. Add flour, baking soda, salt, oats, cinnamon and nutmeg; mix until combined. Fold in apples and raisins. Drop cookie-sized scoops of batter onto prepared baking sheets, about 1 apart. Flatten the dough a bit if you like. How you shape them is how they will stay. Bake for 1012 minutes or until lightly brown. When done remove the cookie sheets from the oven and transfer cookies to a wire rack to cool. Optional glaze: In a small bowl mix powdered sugar with maple extract and a splash of milk to get the consistency you want. Drizzle onto the cooled cookies.
