Beef Empanadas Recipe

2 tbsp. butter
1/2 c. minced onion
1 pound grnd beef
2 lg. tomatoes, minced
1 (3 ounce.) can minced green chilies
Bay leaf, liquid removed
1/4 teaspoon salt
2 tbsp. minced black olives


For filling - saute/fry onion in butter. Add in beef and brown lightly. Add in tomatoes, green chilies and bay leaf; simmer, stirring occasionally, 30 to 35 min or possibly till most of the liquid evaporates. Remove from heat, throw away bay leaf. Stir in olives.
