Blueberry Pancakes

3/4 cups Whole Wheat Flour
3/4 cups All-purpose Flour
1 teaspoon Baking Powder
1 teaspoon Baking Soda
1- 1/2 Tablespoon Sugar
2 whole Egg Whites
1- 1/2 cup Skim Milk
1/4 cups Low Fat Cottage Cheese
1/2 teaspoons Vanilla
1/4 cups Blueberries


In a large bowl, combine flours, baking powder, baking soda and sugar. Set aside. In a medium bowl, whisk together egg whites, milk, cottage cheese and vanilla. Add milk mixture to the dry ingredients and mix until just moist. Spray a large, wide skillet or electric griddle with cooking spray. Heat over medium heat. For each pancake, spoon about 1/2 cup batter onto skillet and top with blueberries. Cook until lightly browned. Serve hot and topped with maple syrup.
