La Zhao (Chinese Red Chili Pepper Mix)

1 Dried red chili flakes
1 Oil


Put the dried red chili pepper flakes in a shallow bowl. You can use chili powder, or flakes as shown in the photo. We usually use flakes. Add enough oil to cover the chili peppers in Step 1 into a small pan. Heat the oil until the surface starts to become wavy. (The oil should feel warm when you hold your hand about 15 cm above the surface.) Pour the hot oil over the chili pepper flakes a little at a time while you mix rapidly.
