Pecan Ice Cream Dessert Recipe

1/2 c. butter, melted
60 Ritz crackers, rolled fine
2 sm. pkg. instant coconut pudding mix
1 1/2 c. lowfat milk
1 quart. pecan ice cream, soft
1 (19 ounce.) Cold Whip


Fold in 9 x 13 inch pan butter with Ritz crackers. Spread 1/2 of mix on bottom. Save 1/2 for top. Mix pudding with lowfat milk. Beat 2 min. Add in ice cream to pudding and spread on crumbs. Spread Cold Whip on top. Finish with remaining crumbs. Chill overnight. Any kind of nut ice cream may be used.
