Strawberry Yogurt Soft Cookies

12 cup Greek yogurt, with honey
14 cup finely chopped strawberry
1 egg
12 teaspoon vanilla
13 cup sugar
34 cup ground oatmeal
12 teaspoon baking powder
14 teaspoon baking soda
12 teaspoon cinnamon


Chop strawberries (I used my mini food processor). Mix all wet ingredients together. Add the dry and mix until combined. The mixture will be slightly wet. Drop by large spoonful onto parchment lined cookie sheet. Bake at 350 for approx 12 minutes. * If you like a sweeter cookie, or use plain Greek yogurt, you could add more sugar. The texture of this cookie is soft, and muffin-like.
