Easy Spicy Chicken Soup

3 tbsp olive oil, extra virgin
1 large onion
3 large carrots
3 piece celery
3 small parsnips
2 jalapenos
1 tbsp Italian Seasoning
1 tbsp dried cilantro
8 cup plus or minus chicken stock
20 oz pre cooked chicken meat
3 small Mexican summer squash


Chop and dice parsnips, carrots, celery, onion and jalapenos. Add them to a pot with olive oil. Add seasoning and saute until half cooked. While the vegetables are cooking chop and dice, the chicken and Summer squash. Add 6 cups of stock, the Summer squash and chicken. If you need more broth add what you need. Heat until hot.
