Patrick's Spicy 3-Bean Chicken Chili

1 lb chicken breast, boneless, diced
1 (15 ounce) can great northern beans
1 (15 ounce) can red beans or 1 (15 ounce) can red kidney beans
1 (15 ounce) can black beans
1 (4 1/2 ounce) can diced green chilies
2 (15 ounce) cans diced tomatoes
1 (1 1/4 ounce) packet chili seasoning mix
2 tablespoons olive oil
salt and pepper


1. In a large sauce pan, brown the diced chicken in olive oil. 2. Add the beans, chilies, and tomatoes. 3. Bring mixture to a boil over medium heat. 4. Add the chili seasoning mix. 5. Cover, turn heat to medium low and simmer one hour. 6. Garnish with green onions, sharp cheddar cheese, tortilla chips, and a dab of sour cream. ENJOY!
