50/50 Olive Oil/Coconut Oil Blend Healthy Chicken Stir Fry

1 tablespoon oil blend
1/2 cup sliced carrots
2 teaspoons minced fresh garlic
2 teaspoons minced fresh ginger
1 cup cooked chicken
2 teaspoons hoisin sauce
2 tablespoons soy sauce
1 cup sliced mushrooms
1 bunch scallion, chopped
1/2 cup chopped broccoli


Heat the oil in large pan on high heat. Add the carrots, garlic, and ginger. Cook the mixture until tender, stirring quickly and then add the chicken, hoisin sauce, and soy sauce. Keep stirring for about 3 to 4 minutes. Add the mushrooms, scallions, and broccoli. Cook the mixture about 2 minutes and serve.
