Oatmeal Blueberry Muffins

1 cup Soy Milk, Plain
1 teaspoon Cider Vinegar
1 cup Regular (not Quick Cooking) Oats
1 whole Egg
1/2 cups Brown Sugar
1/2 cups Canola Oil
1 cup Flour
1 teaspoon Baking Powder
1/2 teaspoons Baking Soda
1/2 teaspoons Salt
1- 1/2 cup Fresh Blueberries


Combine soy milk and vinegar in a large bowl. Add oats. Let stand one hour. After an hour, add egg, sugar, and oil, stirring well. Combine dry ingredients in a medium bowl; add to oats mixture, and stir until just moistened. Fold in blueberries. Spoon into greased muffin tins (12 count), filling 3/4 full. Bake at 400 F for 12-15 minutes.
