Oatmeal Blueberry Muffins
Ingredients:

1 cup rolled oats
1 cup buttermilk or 1 cup sour milk
1 cup brown sugar
1 egg
14 cup vegetable oil
1 cup flour
12 teaspoon salt
1 teaspoon baking powder
12 teaspoon baking soda
12 cup blueberries (fresh or frozen) or 12 cup raisins or 12 cup chocolate chips

Instruction:

Pour milk over oats and let stand for 15-20 minutes (or overnight). Heat oven to 350. Add sugar, egg and oil to oatmeal mixture and beat well. Sift dry ingredients together, then blend lightly with oatmeal mixture. Fold in blueberries. Spoon batter into prepared muffin tins and bake 20-30 minutes. Best served warm with butter!
