Lemon Graham Squares

1 12 cups graham cracker crumbs
12 cup white sugar
12 cup butter, melted
3 large eggs, seperated
12 cup flour
34 cup white sugar
3 tablespoons cold water
juice of one lemon
1 pinch salt
1 tablespoon white sugar


Mix graham cracker crumbs, first amouint of white sugar and butter. Press into 9x9 baking dish, reserving 1 tbsp of crumb mixture. Bake at 350 F for 8-10 minutes. Cook lightly beaten egg YOLKS, flour, second amount of white sugar, water, lemon juice and salt, until thickened. Don't over-thicken as the mixture will become too globby. Spread over crumbs. Beat egg WHITES and third amount of white sugar. When stiff, spread over lemon filling and sprinkle with reserved crumbs. Lightly brown in oven.
