*ari*/sig Zucchini Fritters with Yogurt Dip

5 large Zucchini ,grated
1 medium white or yellow onion
1/2 cup (75g) plain flour
3 eggs
1 tbsp each off chopped fresh oregano,chopped fresh basil and chopped fresh parsley
1 pinch salt and pepper to taste
1 small amount of oil for frying
1 yogurt dip as follows
3/4 cup (180ml) plain Greek yogurt (thick set yogurt)
1 small cucumber, seeded, grated and drained.
1 large clove garlic, crushed
1 tbsp fresh ,chopped or 1/2 tablespoon dried mint
2 tbsp lemon juice


Combine zucchini,onion,flour,eggs ,herbs, dald and pepper to taste in bowl. Shallow-fry by making flat little cakes (similar to potato cakes) in hot oil until lightly browned underneath.Turn fritter cook until well browned on other side. Take out of pan and drain. Yogurt Dip, mix all ingredients in a mixing bowl until well combined. Serve tzatziki with fritters . makes 16 small fritters
