Cucumber and Tomato Salad

1 pint Cherry Or Grape Tomatoes, Halved
1 whole English Cucumber, Chopped
1/2 whole Onion, White Or Red Will Do
1 bunch Fresh Parsley, Chopped
2 Tablespoons Brown Sugar
1 teaspoon Coarse Salt
1/2 teaspoons Black Pepper
2 Tablespoons Malt Vinegar
1/4 cups Olive Oil


Place all chopped tomatoes, cucumbers, onion and parsley in a large bowl. Combine sugar, salt, pepper, vinegar and olive oil in a mason jar with a lid. Shake well. Pour over vegetables and toss. Serve immediately.
